Thanksgiving Recipe; Potato Cakes

Here in America, we celebrate a holiday called Thanksgiving. Thanksgiving is a holiday in America where families gather around and it is a day where we recognize and be thankful for everything that we have come to, whether as a country, a family or just as individuals. We celebrate this holiday on November 26, and Thanksgiving is usually celebrated with lots of food being cooked. These foods often include turkey, ham, mashed potatoes, green beans, pies and there are lots of others, usually including a few family specials. Since Thanksgiving is coming up soon, I figured that I would share a recipe with you guys just incase you might want to try it at home, whether you celebrate Thanksgiving or not.

 

Materials needed-The recipe that I will be sharing with you guys is how to make potato cakes. Not like the kind that you bake, but it is like a type of cake that you fry in a pan. You will need, for your ingredients; at least 3 medium sized potatoes (for at least 6 potato cakes. Each medium potato makes around two potato cakes), an egg, salt and pepper, onion, and vegetable oil. The tools you will need are a large/medium pan, a metal spatula, a grater, a knife (recommended adult supervision), two bowls, a large plate with a couple paper towels over it, and a large clean cloth. This is a simple and tasty treat that you can easily make. All it takes is a little patience and elbow grease.

 

Instructions- First wash the potatoes and then take your grater and shred however many you have laid out. After this is done, take your shredded potatoes (it is okay if the potatoes start to turn brown. This happens naturally and doesn’t affect anything) and place them in the middle of your large cloth and cover the potatoes. Then take your cloth and put it over your bowl, then wring out the water from the potatoes (this prevents the cakes from getting greasy) and don’t get rid of the water because the starch that will settle at the bottom is important later on. Once you get as much water out as you can, put your potato shreds in your other bowl and warm them up in the microwave for about two minutes.


While the potatoes are warming up, this is when you get your pan ready for frying. What you do is take your large/medium pan and pour about a half inch of oil into the pan. Turn on the heat to medium. By the time that you are done with this, your potatoes should be out of the microwave; just set these aside for now. You should see a white line at the bottom of your bowl with the potato water. This is the starch that has settled, so take the bowl and slowly pour the water down your sink (the starch will stay in the bowl). Then crack your egg into the bowl with the starch, if you want you can add a bit of mayonnaise to the mix with salt, pepper, and diced onion (onion is optional). Whisk the mix together and then pour this into your bowl with the potatoes and mix. After this, form your potato cakes into around three and a half inches wide, and ¾ of an inch thick. Carefully put them in your oil and let them cook for about two and a half minutes on each side. Then just place your cakes on your plate with the paper towels and wait for the excess oil to drip off. Now, enjoy! (and you can put different condiments on this like ketchup, etc.)
